Black Bean Coleslaw

Ingredients
3/4c light mayo1/4c raspberry balsamic vinegar1t salt1t oregano1/2t pepper3T sugar1 10oz. package pre-shredded cabbage1 can black beans, drained & rinsed1 small red onion, chopped1 bell pepper, chopped1 stalk celery, chopped1 5oz bag salted cashews1/2c low fat bacon bits2T fresh chopped parsley
Directions
Mix mayo, vinegar, sugar, salt, pepper & oregano in the bottom of a large bowl. Add the rest of the ingredients & mix well. Makes 10-12 one cup servings.

Can be made vegan or vegetarian by substituting fake bacon bits and soy mayo. Omitting the cashews cuts the calories on this dish significantly, but the cashews give it a kick if you're making it to share.
