Applesauce Muffins

Ingredients
Whole Wheat Flour, 1 cupFlour, white, 1 cup Baking Soda, .75 tsp Baking Powder, 1 tsp Cinnamon, ground, 1 tsp Nutmeg, ground, 1 tspOrange Peel, 1 tsp Raisins, .25 cup (not packed) Cranberries, dried, sweetened (craisins), 0.25 cupWalnuts, .25 cup, chopped Applesauce, unsweetened, 1.25 cupCanola Oil, 2 tbsp Egg, fresh, 1 large
Directions
Add both flours, baking soda, baking powder, and spices to mixing bowl. Blend thoroughly with a mixing spoon.

Make a hole in the middle of the dry ingredients, and put in the raisins, cranberries, and walnuts. Add the applesauce, egg, and oil on top of those, and gently mix the wet ingredients until slightly blended, before gently blending all ingredients together. DO NOT USE AN ELECTRIC MIXER! To make moist muffins, you should always mix gently by hand. You do not need to get all the clumps out - it is more important to avoid over-mixing the batter.

Spoon batter into muffin pan (paper liners work best, but spray-on non-stick oil of some sort would work too). Bake for about 20 minutes at 375`, or until muffins start to brown a little on top.

Makes 12 muffins.

    I make something similiar to this with dried cranberries and raisin or dried berries. I put 1/4 C of ground flax in it also. - 11/13/09
