Tomatoe & Mozzarella Salad

Ingredients
5 medium vine ripe tomatoesfresh mozzarella (the soft kind which is usually packaged in water)6 cloves garlic (roasted)1 slice of medium red onion10 black olives2 tbsp olive oil2 tbsp basalmic vinegrettefresh basil leaves - to taste
Directions
cut tomatoes into bite sized pieces and remove seeds
cut fresh mozzarella into bite sized cubes
slice each roasted garlic clove into 2 - 3 pieces
chop onion slice into one inch pieces
halve olives and remove the pit (the wrinkly kind taste best in this salad)
chop basil leaves

Combine all ingredients in a glass bowl and toss with olive oil and the best basalmic vinegrette you can afford - you get better flavor for more $.

Makes 6 1-cup servings.
