Chicken and Brown Rice Paradise

Ingredients
8 oz. Boneless skinless chicken breast 2 Cups Long grain brown rice21/2 cups Chicken Broth1 tbsp. Olive Oil1/2 teaspoon ground ginger1 teaspoon garlic powder1 tbsp. Soy sauce1/2 cup sliced waterchestnuts1/4 cup slivered almonds1/4 pkg. frozen mixed veggies (of your choice)
Directions
Start by cutting chicken into bite size peices,Brown chicken in the olive oil until all pink is gone.
Next,Add all other ingredients(except almonds and frozen veggies) to a nice size pot ,add browned chicken and let simmer about 25 minutes and add frozen veggies continue simmering for another 10-12 minutes or until veggies are to your liking,Add almonds and stir.

Simple!

    I'm going to try it -- for lower sodium use low sodium soy sauce and one trick I do is rinse the food (canned too) and it helps reduce the sodium. Learned that from a friend following Pritikin :) - 1/23/10
