Pumpkin & Sweet Potato Soup

1-29oz can pure pumpkin puree (not pie filling)1 large sweet potato, cubed1 med onion, diced3 1/2 cups vegetable stock1 cup fat free half half8 Tbsp light butter1/4 tsp nutmegpepper to taste
Place all ingredients, except half & half and butter, in saucepan. Simmer until potatoes & onions are tender, about 15-20 min. Remove from heat. Using food processor or immersion blender, blend with butter until smooth. Stir in half & half, nutmeg, & pepper. Serve with a dollop of fat free sour cream, if desired.
