Erynn's Detox Dahl

Ingredients
1c Dry Lentils (I use red, it's up to you though!)2 Carrots1 Shallot (or small onion)2 Medium Potatoes (I like red, but try sweet potatoes to change it up!)3 small turnips (or half a regular one)2 tbsp Olive Oil (or ghee)1.5 tsp grated ginger root2 tsp crushed coriander seed1 tsp crushed cumin seed1 tsp ground tumeric1.5 tsp salt(all spices are to taste, feel free to add and subtract according to personal preference).
Directions
Chop all veggies into small cubes or bite-sized pieces, set aside.

Heat oil in a large soup pot, toss in spices (minus ginger root) and veggies, sautee for 2-3 minutes.

Add lentils and water, bring to a boil. Reduce to simmer and stir in ginger root. Cook until veggies are tender (approx 30 mins). I like to cook mine until the lentils are split and mushy, approx 45 mins.

Makes 8 1-cup servings or 4 2-cup servings. Nutritional information for 1-cup serving.
