Mexican Chicken

Ingredients
2 Boneless Skinless Chicken Breast4 Tablespoons of Salsa2 cups of brown rice1/4 cup shredded Cheddar CheeseSouthwest seasoning to taste
Directions
1. Season chicken breast to liking.
2. Grill chicken over medium eat for about 20 min or until cooked through. You can also bake if you don't like to grill or can't.
3. While chicken is cooking prepare rice according to package.
4. After chicken is cooked through add cheese on top and allow to melt.
5. Place rice on a serving dish and add chicken to top.
6. Pour salsa over top of chicken and serve.
