Great Grilled Potatoes

Ingredients
6 large raw potatoes1 medium onion (diced or strips)1 Bell pepper (green pepper) @ 1 cup chopped1 Tbsp Crushed red pepper flakes (ground pepper also works)2 Tbsp Garlic Powder1 large sheet of foil
Directions
Wash and dice potatoes into 2 to 3 inch pieces. Place into bowl. Wash and dice onion and add to bowl of potatoes. Wash and clean bell pepper then cut into either strips or dice which ever you prefer. Add this to the bowl of potatoes and onions. (You can always use a food processor for the onion and bell pepper to save time).

Spread the foil piece out onto a large cookie sheet. Spray entire sheet with non-stick spray. Add ingredients from bowl then sprinkle red pepper flakes and garlic powder across all other ingredients. Then close foil into a large packet folding edges carefully to ensure that foil is closed. Try to let the potatoes lay flat the thicker your packet the longer it takes to cook the potatoes through.

Take cookie sheet out to the grill and gently slide off of cookie sheet onto grill rack. Cook for approximately 20 minutes and carefully (being sure not to tear the foil) flip the packet and cook an additional 20 minutes. Cooking times will vary depending on the amount of heat. Be sure to check potatoes often after about 30 minutes of cook time.

When opening foil packet remember that the contents are very hot (Beware of Steam).
