Herb Mayonnaise

Ingredients
1 c olive oil1 egg (room temperature)1 egg yolk (room temperature)1 tbsp whey (for a preservative if you have it)1.5 tbsp lemon juice1 tsp dijon or other grainy mustard1/4 fresh herbs
Directions
mix whey, lemon juice, mustard, egg, and egg yolk in food processor. gradually add in olive oil. add fresh herbs at the end.

this mayo has a thinner consistency than the store bought stuff, but it may slightly thicken in the fridge.

great for chicken salad! the fresh herbs and the olive oil base give it a light flavor.
