Cook yourself thin nutless banana muffins

Ingredients
1 cup all-purpose flour1 cup whole-wheat flour1/2 cup rolled oats2 teaspoon ground cinnamon2 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt1 ripe banana, mashed1/2 cup light brown sugar2 tablespoons vegetable oil2 large eggs1 1/4 cups reduced-fat buttermilk1 teaspoon pure vanilla extract2 tablespoons chocolate chips
Directions
1. Preheat the oven to 400 degrees. Line a 12-muffin tray with paper liners. Set aside.

2. In a standing mixer, combine the all-purpose flour, whole-wheat flour, rolled oats, ground cinnamon, baking powder, baking soda, salt and mashed banana, and blend on low speed for 2 minutes. Add the brown sugar, vegetable oil, eggs and reduced-fat buttermilk, and blend for 2 minutes on medium speed. Add the vanilla extract and mix until well combined.

3. Using an ice cream scoop, portion the batter evenly into the muffin tin, and top each muffin with 3 to 4 chocolate chips. Bake at 400 degrees for 15 minutes. Once muffins are baked through, remove them from the oven and let cool. Serve.

    I am addicted to this book - there were really good but I think by adding the .5 cup of walnuts they would have been better - I also think I needed a riper banana. I ate 2 - around 2 hours ago and I am still full and satisfied! - 6/8/09

    This is a good recipe but i really feel it needs more banana. Next time we make it we will use 2 or 3 bananas instead of one. It tasted like a plain muffin. My husband is a chef & he said one banana for 12 muffins is a little low. the additional 1 or 2 bananas will only add about 20 calories each - 8/16/09
