Lasagna Roll-Ups

Ingredients
1 whole wheat lasagna noodle (cooked, rinsed in cold water)2 tbsp chopped peppers, onion & carrots2 tbsp low fat ricotta2 tbsp low fat cottage cheese20 grams frozen, chopped spinach2 tbsp unsalted tomato sauce1/2 tbsp shredded parmagiano
Directions
Combine all ingredients except sauce and parmagiano. Roll into cooked noodle. Put into a baking dish. Cover with sauce and parmagiano. Cover with foil and bake @ 350 degrees for about 15-20 minutes. Remove foil and bake for another 5-10 minutes.

    Amazing! I'm not a veggie fan but these were incredible! I bakes a bunch, froze them and just took them out as I needed them. They were very filling for the amount of calories. Making them again this week! - 2/7/10

    Very good. I made a few changes. I'm not a big fan of cooked vegetables, so I just add some raw ones on the side. I also added some garlic powder and basil to the cheese mix that I stuffed into the roll-up. I think in the future I'll use fresh spinach, sometimes frozen just doesn't taste the gre - 11/8/09
