Couscous stuffed peppers

Ingredients
1 box Near East Garlic & Olive Oil couscous4 large red peppers3/4 cup chopped sun-dried tomatoes4 tb capers2 oz goat-cheese
Directions
Boil red peppers for about 5 minutes or until slightly softened. Drain well.

Cook couscous according to package directions. Add tomatoes and capers, stuff into peppers. Top with goat cheese. Bake at 350 for about 15 minutes or until peppers are soft but hold shape.
