* Lentils, 2 cup (remove) * *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 6 serving (remove) * Onions, raw, 2 cup, chopped (remove) * Carrots, cooked, 0.5 cup slices (remove) * *Potato, raw, 2 cup diced (remove) * Chorizo, pork and beef, 3 link (4" long) (remove) * Ham, extra lean, (5% fat), 1 cup, diced (remove) * *Green Chiles (Whole), 2 oz (remove) * Olive Oil, 1 tbsp (remove) * Garlic, 3 cloves (remove) * Pepper, red or cayenne, 1 tbsp (remove) * *Cumin seed, 1 tbsp (remove) * Paprika, 1 tbsp (remove)
Cook onion and carrot in oil until soft. Add chorizo and ham and cook for 10 min. Add peeled, chopped potato 2 cans of diced tomato (with liquid), and green chiles, and all spices. Add enough water to cover potatoes. Cook covered for 15 min. Add Lentils and cook covered for another 20-30 min.
