Herbalicious Mackerel Cakes

Ingredients
12 oz Mackerel, without bones (90 calories per 1/4 cup)1 tsp Worcestershire sauce1 large egg1 Tbs. plus 1 tsp. light sour cream1 slice white toast, crumbled1 tsp. baking powder1/2 tsp. garlic powder1/2 tsp. ground rosemary
Directions
In a medium sized bowl, lightly beat the egg, and add the garlic and rosemary. Stir in Worcestershire sauce, sour cream, and baking powder. Add the bread, and finally the fish. Mix all ingredients until fish is coated. Mold into 8 cakes. Spray a skillet with cooking spray. Fry fish cakes on skillet on medium heat for 8-10 minutes or until brown on both sides.

    I made these, but I baked them instead of frying, They turned out well, and I will make them again. The next time, though, I think that I will has more Rosemary, and I will also add some grated lemon peel. - 11/24/10
