Low Sodium, Lo-Cal Chicken Stir Fry

Ingredients
1 & 1/2 lb. chicken (bite-sized pieces)3 c. sliced onions12 oz. bag of frozen green beans12 oz. bag of frozen broccoli, carrots, snap peas, and water chestnuts3 c. uncooked brown rice2 tbsp. garlic powder
Directions
1. Cook rice. Minute-rice works great!
2. Saute onions in pan. (or I like to use left over onions from fajitas) Remove from pan and cook chicken with some salt and pepper seasoning.
3. Cook vegetables in the microwave.
4. Combine all ingredients together and add garlic powder.

    Really good, I just added two cloves of minced garlic to the onions when they cooked instead of using powder. Tasty!!! - 1/28/10
