Spicy Carrot Salad

Ingredients
2 tsps ground flax seed2 tbsps hot water1/4 cup orange juice2 tbsps apple cider vinegar (another fruit vinegar of white wine vinegar will work too)1/2 tsp Spanish paprika1/4 tsp cumin4 large carrots, grated3-4 small seedless oranges, peeled and sectioned 2 tbsps walnuts (optional)
Directions
---Put the ground flax seeds in a small bowl and add the hot water. Stir and allow to sit until thickened, about 5-10 minutes. Then add the OJ, vinegar, paprika and cumin.

---Grate the carrots. Put them in a bowl and immediately add the dressing, mix well. Fold in the orange sections and sprinkle with walnuts.

---Serve cold or at room temperature.
