1 c. uncooked quinoa, rinsed & drained2 c. water pinch of salt (optional)2 cans (6 oz. ea.) tuna packed in water, drained1 can (12 oz.) black beans, rinsed and draineda handful of parsley, roughly chopped
Combine quinoa, water, and salt in saucepan with a lid. Bring to a boil, then reduce flame and simmer, covered, till water is absorbed and quinoa is tender 12-15 mintues). Stir every so often with fork so it doesn't stick. Cool before proceeding.
Combine cooked quinoa with tuna (break apart with a fork), beans, & parsley. Season with salt and pepper to taste.
Great served with fresh greens or garnished with a fresh squeeze of citrus juice!
