Spinach Panini

Ingredients
1 cup Spinach1/4 sliced Onion4 thin slices Tomato1 ring raw Onion (split up ring)1 -2 tlbs. Pesto1 oz Mozzerella Cheese (sliced small)2 slices Italian bread1 tsp Olive Oil
Directions
Place all ingredients onto one slice of bread and spread Pesto over top of veggies. Place 2nd slice of bread over top. Brush top slice with Olive Oil and place oiled side down in hot fry pan or panini pan. Brush the other slice bread and press with a panini press or a heavy oven proof plate.
Toast on both sides. Slice and serve.
