Raspberry Swirl

Ingredients
1 1/2 c graham crackers3 T melted margarine2 T sugar3 eggs (seperated)1 - 8 oz cream cheese, fat free3/4 c sugar1 - 8 oz cool whip, lite1 - 10 oz frozen raspberries
Directions
Combine crushed graham crackers, margarine, and 2 T sugar. Press into a 9 X 13 inch pan.

Beast egg yolds til thick. Add cream cheese, sugar, pinch of salt. Beat til smooth. Beat egg whites til stiff. Fold cool whip with egg whites and then into cream cheese mixture. In a mixer or blender cruch raspberries to a pulp. Gently swirl 1/2 of pulp mixture into cream cheese filling and spread on crust. Spoon remaining over top and swirl with a knife. Freeze. Cut into 16 servings.

    This dessert is absolutely delicious. My sons made it for me on Mother's Day, they are 8 and 10 so it was easy to make and everyone in the house thought it was delicious. Just 250 calories. My kids even made the comment this doesn't taste like diet food. - 5/14/07
