Winter Bean Casserole

Olive oil cooking spray1 lb winter squash (cut into 1.5 inch pieces)2 large carrots, sliced1 small parsnip, sliced2 medium potatoes, unpeeled, halved and sliced2 medium onions, cut into wedges15oz can Great Northern beans, drained and rinsed1.5 tsp dried basil leaves1/2 tsp dried thyme leaves1.5 cups mixed dried fruits, cut into large pieces3 tbsp white-wine vinegar1.5 tbsp olive oil1/2 cup minced parsleySalt and Pepper
Combine vegetables and beans in casserole dish, sprayed with olive oil.
Sprinkle with herbs and toss.
Bake in a preheated 425 degree F oven until vegetables are tender, (30min), adding dried fruit at the last 5 minutes.
Spoon vegetable mixture into bowl.
Mix vinegar and oil; drizzle over vegetables, add parsley and toss.
Season to taste with salt and pepper
