Cranberry Walnut Oatmeal Cookies

Ingredients
3/4 cup dried cranberries1/2 cup warm water2 cups rolled oats1 1/2 cups whole-wheat pastry flour2 tsp. alluminum-free baking powder1/2 tsp ground cinnamon1/2 tsp ground ginger1/2 tsp salt1/2 cup maple syrup of agave nectar1/3 cup safflower oil or olive oil1 tsp pure vanilla extract1/4 tsp pure almond extract (optional)2/3 cup raw walnuts, coarsely chopped
Directions
1. In a small bowl, cover dried cranberries with warm water. Set aside for 15 minutes to rehydrate and soften.

2. Preheat oven to 375F. Line two large cookie sheets with parchment paper, or lightly oil.

3. In a medium bowl, combine oats, flour, baking powder, cinnamon ginger, and salt. Add maple syrup, oil, vanilla and almond extract and stir well to combine. Stir in dried cranberries with their water and walnuts. Stir until just combined.

4. Press cookies into one inch balls, flattening slightly with wet fingers. If you don't form them into balls, they will fall apart when baked.

5. Bake for 10 to 15 minutes, until golden brown on bottom, and slightly brown around edges.
