potato soup

Ingredients
potatoes ( I use the small yukon gold)minced garliconion mincedcarrots and celery choppedsmoked pork sausage just a small amount to give a smokey flavor
Directions
chop garlic, onion, carrots, potatoes, and celery add to pot and cover with water
boil until all is tender
could be pureed a bit with a stick blender for a creamy texture
can also top with low fat shredded cheddar and fat free sour cream and some chopped green onions
