Cherie's Apple Wheat Bran Flax Meal Muffins

3/4 cup cooked old fashion quaker oatmeal1/4 cup flax meal1 cup wheat bran1 T baking powder1 tsp baking soda1/4 cup shopped pecans or walnuts1/2 cup brown sugar1 T cinnamon1/2 cup raisins1 1/2 large baking apples shredded (may substitute 2 medium apples or 2 over ripe-bananas)1 tsp vanilla extract1 cup skim or non-fat milk2 T olive oil If you prefer a sweeter muffin, you can add 4 packets of Splenda.When cool spread with low-fat cream cheese or your favorite fruit jelly. Cream cheese and jelly are not included in the nutritional facts.
Yields 18 muffins. Bake for 15 to 20 minutes at 425 degree pre-heated oven.
Combine dry ingredients, then add olive oil, skim milk, and vanilla. Mix and fill muffin cups sprayed with non-stick cooking spray. Fill tins to top. Bake a little longer if needed. Remove from tins to allow to fully cool
