Pineapple Grilled Chicken

4 chicken breast halves without skin1 cup pineapple juice2/3 cup sherry2 Tbs brown sugar1 Tbs rosemary, fresh and chopped1 clove garlic, minced1 Tbs Oil1 cup onion, chopped1 cup mushroom, chopped1 cup pineapple, chopped4 ounces Monterey Jack cheese, grated
Mix first 6 ingredients and put in a plastic bag and marinate overnight.
Saute onion and mushrooms in oil until they are soft, but not browned.
Remove chicken from marinade and grill 4 minutes on each side.
When chicken is finished cooking, put in a baking dish, top with onion, mushroom and pineapple. Cover with cheese and put under the broiler till melted.
