Fast & Easy Crawfish Etouffee

1 Bunch green onions (approx 1 cup)1 tbsp Light margarine1 lb crawfish tails (previously frozen - undrained)1 can (26 oz) Campbell's 98% Fat Free Cream of Mushroom Soup10 oz water1/2 tsp Liquid Crab Boil (or more to taste)
Chop green onions. Saute the onions in light margarine in a large saucepan. Once onions are clear, add crawfish tails (do not drain), cream of mushroom soup and water. Add Liquid Crab Boil (1/2 tsp at a time) until it is as spicy as you want it. (I usually add 1-2 tsp because I like it really spicy!) Bring to low boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally. Serve over rice or over baked potato.

I'm a little skeptical of this. Is the soup a replacement for the roux? Nothing in the world tastes as good as a home made roux.(its also what give sthe etouffee its unique flavor) - 4/26/07

Try it before you knock it! Some people like things prepared a bit differently.
