Oatmeal & Banana Pancakes

Ingredients
1 banana (small)3 tbsps skim milk1/4 tsp vanilla extract1/3 cup oats1 1/2 tbsp oats3 tbsp whole wheat flourdash salt1/2 tsp baking powder1 egg white, stiffly beaten
Directions
• In a bowl, combine these ingredients

3 tbsp whole wheat flour
dash salt
1/2 tsp baking powder

• Put these ingredients in a blender and puree until smooth

1 banana (small)
3 tbsps skim milk
1/4 tsp vanilla extract
1/3 cup oats

• Fold banana puree into flour mixture. to form a thick batter. Gently fold in whipped egg white.
Cook in a non-stick griddle, until lightly browned on both sides

Serves 2

    This is a nice base recipe, I had a very gooey result, so I added a touch more wheat flour and added a cup of pineapple greek yogurt for more protein, turned out great!!! Thanks - 3/30/13
