Italian Chicken Skillet

- 2 teaspoons olive oil- 2 onions, chopped- 1 large carrot, chopped- 1 large celery stalk, chopped- 3/4 pound skinless boneless chicken breast, cut into thin strips- 1 can (14 1/2 ounces) crushed tomatoes- 1 tablespoon fresh basil - 1/2 teaspoon salt- 1/4 teaspoon black pepper
1. Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, carrot and celery; cook, stirring occasionally, until the vegetables are softened (about 10 minutes).
2. Add the chicken and cook; stirring occasionally until opaque (about 5 minutes). Stir in the tomatoes, basil, salt and pepper. Reduce the heat and simmer, stirring occasionally, until the chicken is cooked completely (about 10 minutes).
