Pork Tenderloin with Apples & Sweet Potato

Ingredients
1.5 lb pork tenderloin2 apples {we like Pink Lady or Golden Delicious}2 sweet potatos2 T Walnut oil {or olive oil, or....to taste}
Directions
Lay pork tenderloin in baking dish. Cut apples into eighths and slice the sweet potatos; add to baking dish. Salt and pepper to taste.
Cover and place in oven {don't have to preheat} at 400 degrees.
Check when you smell the apples; continue cooking until they are soft.
Remove from oven.
Cut pork into 4 oz chunks.
Serve hot with the apples and potatos scooped over the pork.
Throwing in walnut, raisins or both sounds good, but is optional.

    Love it. I added the raisens and walnuts (maybe an eight of a cup of each.) I also used cayenne pepper and cinnamon to spice it up, and added 2 T. of brown sugar splenda for cooking. Yummy! - 6/27/10
