Sweet Potatoe Fries

2 sweet potatoes1 tablespoon olive oil1/2 tablespoon chili powder1/2 tablespoon garlic powder1/4 tablespoon salt (plus a bit more for sprinkling)juice of 1/2 lime
Preheat oven to 425.
Wash and dry the potatoes and (with the skin on), slic into 1/2 inch thick rounds, cut the rounds into 1/2 inch thick finger-shaped pieces. Toss the potatoes in a bowl with the olive oil, chili powder, garlic powder and salt.
On a baking sheet, spread the sweet potatoes fries in a single layer and roast, stirring every 10 minutes, until brown and tender. cook 30-35 minutes. Remove from the oven, transfer to a platter or bowl and sprinkle with a little more salt and lime juice.

Awesome!! I skipped the lime juice and extra salt at the end. Very tasty! My son is allergic to potato, but sweet potato is a possible alternative. The were the first "fries" he's had in months.
The thinner the cut and the longer you cook the crispier they get, just be carefull not to burn. - 10/6/10

Made these tonight. My husband said it was the best sweet potatoes he has ever had. I peeled the potatoes and I put less chili powder and added cayanne powder. These had great flavor and HEAT. The kids couldn't eat them, but we loved them! I also only baked them for a total of 20 minutes. - 5/26/10
