Ingredients
1 package pork tenderloin (about a pound) 1 large can (28 oz) whole or stewed tomatos1 large can (28 oz) diced tomatos drained1 can (15 oz) black beans1 can (15 oz) red kidney beans (you can use any type of canned bean you like to equal about 30 oz of beans)1 large onion chopped1 green pepper choppedcumin to taste (about 1-2 tsp)chili powder to taste (about 1-2 TBSP)cayenne pepper to taste (1 to 2 tsp)Salt
Directions
Roughly chop onion and green pepper. Toss into crock pot. Cut up pork tenderloin into about 1/2 inch cubes (cutting off any fatty parts you see). Add to crock-pot. Add the 2 cans of tomatos and beans to pot. Add about 1 tsp cumin and 1 TBSP Chili Powder. Set crock-pot for 8 hr on low. Taste after 8 hrs and adjust seasonings to taste. It can be kinda soupy, if you like it thicker you can substitute a can of refried beans for 1 of the can of beans, or you can cook it with the lid off for the last hour or so. Makes 8 large bowls about 2 cups each.
