Amazing Summer Chicken

Ingredients
1 lb chicken breasts (no skin or bone)1 clove garlic, minced1 11 oz can artichoke hearts (not marinated... can substitute frozen), diced1 large tomato, diced1/2 large sweet red bell pepper, diced2 low fat string cheese, diced1/4 c white wine vinegar (you could substitute wine or apple juice)cilantro for garnish
Directions
Spray non-stick oven proof sautee pan, heat over medium high heat and add garlic.
Once pan is up to heat, add chicken breasts, season with s/p; brown on each side (about 5 mins).
Combine all diced vegetables and cheese; add to top of chicken in pan.
Pour vinegar over top, season once again with s/p.
Put directly into preheated oven 350 deg and bake until chicken is cooked through.

    Tasty--I'm not a huge red pepper person, but we cooked them al dente, so not bad. I might sub for tomatoes later. I was disappointed not to see a recommended cooking time--makes it harder to guesstimate in advance how much time to plan for preparing the meal. - 8/5/09
