Honey & Spice Banana Muffins

Ingredients
1 Cup Bran Flakes Cereal1/4 Cup Skim Milk1 Cup All Purpose Flour (or 3/4 cup Whole Wheat Flour)1/2 Cup Honey1/4 Cup Melted Margarine2/3 Cup Mashed Ripe Banana1 1/2 tsp. baking powder1/2 tsp. salt1/4 tsp. baking soda1/2 tsp cinnamon1/4 tsp. ground ginger1/4 tsp. ground nutmeg
Directions
Heat oven to 375 degrees.

In a small bowl, soak cereal in milk for 5 minutes. In a large bowl, combine remaining ingredients, then add cereal mixture.

Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes).

Spoon into greased or paper-lined 12-cup muffin pan, filling cups 2/3 full.

Bake for 20 to 25 minutes, or until tops springback when touched lightly.

Cool 5 minutes; remove from pan.

Makes 12 muffins.
