2/3 cup sliced carrot1/2 cup diced onion2 cloves garlic3 cups fat free broth of any kind (chicken, beef or veggie)1 1/2 cups cabbage diced1/2 cup green beans1 tbsp tomato paste1/2 tsp basil dried1/4 tsp dried oregano1/4 tsp salt1/2 cup zucchini dicedpepper to taste
In a large saucepan wprayed with nonstick spray, saute the carrot, onion and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano and salt/pepper. Bring to a boil. Lower heat and simmer covered, about 15 minutes or until beans are tender. Stir zucchini and heat 3-4 minutes. Serve Hot. I make 2-3 Batches and freeze them in bowls.
