Eggplants, 3onions, raw 2 medium slicedgarlic, 2 clovesolive oil 2 tbspTomato sauce, 1 canparsley, 2 tbsp choppedfeta cheese, 1 cup crumbled
Cut eggplants making a cross without separating the pieces. Saute them for a while in oil. Heat the olive oil and add the onions and garlic. Saute them for a while and then add tomatoes, parsley salt and pepper and cook for 10 min. Put the eggplants in a pan and stuff them with the onion mix. Cook in the oven for about 45 min. You may need to add a little of water while in the oven. 10 minutes before the end add feta cheese on the top of eggplands.
