Directions
Toss 1/2 cup chickpeas, rinsed and drained, with 1/2 cup halved cherry or grape tomatoes, 1 chopped cucumber, 10 large or 6 jumbo black olives, and 1 Tbsp lemon juice. Serve with 1 toasted large whole wheat pita.

    5 stars for prep: It's the perfect last minute "hurry-up-and-leave-for-work" kind of lunch. Just a few minutes and w/minimal cleanup, too!

    But 3 stars, because I find it somewhat blah. Maybe it's just my taste. I mean, I love these ingredients separately. Maybe I'll try adding garlic next time. - 10/15/09
