Maple Soy Salmon

Ingredients

1/2 cup of maple syrup (pancake syrup, etc)1 cup of soy sauce (low sodium preferred)1 tbsp of cayenne pepper
In a large 8X8 pan, mix together the maple syrup, soy sauce and cayenne pepper.
Place salmon face down into the mixture. cover and marinate for half an hour to a couple of hours.
When ready, remove salmon from pan and put to the side. Put in oven and bake at 400 degrees until flaky (about seven to fourteen minutes.)
While the salmon is cooking take the liquid mixture and put in a pot on the stove. Slowly bring mixture to a boil, stirring frequently. The mixture will reduce and carmelize.
When salmon is ready, take out of oven and drizzle the now thick sauce over the salmon.
makes four servings.
Serve immediately and enjoy....so easy, so good, and pairs well with brown rice and roasted green beans or asparagus.
