Broccoli Cheddar Frittata

Ingredients
4 lg eggs4 egg white1 c. broccoli, chopped, steamed1/4 c. onion, chopped2 T. watersaltpepper1 c. cheddar cheese, shredded
Directions
Lightly sautee onions in oven-safe skillet. Add steamed broccoli. Cook until tender. Whip eggs and water in bowl. Salt and pepper to taste. Pour over veggies in skillet. Cook until edges are done and middle is only slightly liquid. Top with cheese. Finish cooking under broiler in oven until eggs are set and firm. Cheese will melt. Don't overcook or eggs will become tough.

Serve in 8 wedges.

    This was really good but was just a little bland. I substituted milk for a lighter texture which worked well. Next time I may add crumbled bacon or some other veggies for more flavor. Wonderful recipe for making my first fritatta! - 10/6/11

    This was so great and delicious..I put some other vegetables in it like mushrooms and celery.. I also added some lean turkey lunchmeat..We ate it for supper.. Loved it! - 8/29/09
