Whole Grain Pasta with Arugula, Feta and Tomatoes

Ingredients
Whole Grain Pasta, Fusilli or Rotini variety2 cups chopped tomatoes (can be boiled and peeled if preferred) 1 Tbsp Balsamic vinegar2 - 2.5 cups arugula2 Tbsp olive oil3/4 cup feta, crumbledblack pepper to taste
Directions
1. Cook pasta; drain and return to pot.
2. Add chopped tomatoes, balsamic vinegar, olive oil, arugula, black pepper and feta. Stir to combine.

Makes 3-4 servings.

*For variety, add ingredients such as olives, fresh basil, roasted zucchini, or white beans or replace the arugula with spinach.
