Black Bean Soup with Curry

Ingredients
black beans, onion, carrot, garlic, olive oil, curry powder, coriander, chicken broh, salt, black pepper
Directions
1. Soak the beans overnight in cold water, then drain. Cut the onion and carrot into a fine dice. Mince the garlic.

2. Using a soup pot or large saucepan, heat the oil. Add the onion and carrot, sauteeing for about 5 minutes on medium. Add the garlic and cook for 1 more minute. Add the curry and coriander and stir to combine for an additional 1 minute.

3. Pour in the chicken broth and beans, bringing the mixture to a boil. Reduce to a simmer and cook for 1 1/2 hours.
