1-1/2 pounds boneless skinless chicken breast1/4 C. Miso2 Tbs. Peanut Oil2 Tbs. Red Wine Vinegar2 Tbs. Packed Brown Sugar2 Tbs. Bourbon2 Cloves Garlic Crushed2 Slices Ginger Root
Cut Chicken into bite-size cubes of chicken. Mix the remaining ingredients in a dish till well incorporated. Pour over chicken and marinate at least 4 hours or overnight. Preheat oven to 350 degrees. Bake for 45 minutes or until chicken is done. Serve over brown rice and garnish with chopped green onions and toasted sesame seeds. Sauteed sugar snap peas are a great side dish with this.
