Portabella tuna melt

1 Portabella mushroom cap1 can tuna (in water), drained1 carrot, chopped1 green onion, chopped1 tsp olive oil1/4 cup 2% milk cheddar
Preheat oven to 475 degrees F.
Remove gills from mushroom cap; place in pan sprayed with cooking spray. Put mushroom in oven while it's preheating so it will be pretty well done by the time you make the filling.
Mix tuna, carrot, onion, and oil. Sprinkle with garlic powder and sea salt.
Stuff filling into pre-cooked mushroom cap. Bake about 5 minutes, until heated through. Top with cheese and cook for another 3 minutes, until cheese is melted.
Makes 1 good-sized serving.
