Kelly's Asian Beef and Broccoli

3 Tbsp Cornstarch (divided)1/2 Cup Beef Broth2 Tbsp Beef Broth1/2 Tsp Garlic Powder1 Clove Garlic (chopped)1 lb Beef Round or Flank Steak cut in strips2 Tbsp Sesame Oil4 Cups Broccoli Florets1 Sm. Onion or bunch of Green Onion (chop)1/3 Cup Lite Soy Sauce2 Tbsp Brown Sugar1 Tsp Ground Ginger1 Tsp Red Pepper Flakes (optional)4 cups cooked whole wheat linguine or spaghetti pasta
1. In large bowl whisk 2 tbsp cornstarch, 2 tbsp beef broth, and garlic powder. Add steak, toss.
2. In med (separate) bowl whisk soy sauce, brown sugar, ginger, 1 tbsp cornstarch, 1/2 c. beef broth, chopped garlic and red pepper flakes. Set aside.
3. At med-high heat, add 1 tbsp sesame oil to large skillet (or wok). Stir-fry steak to desired doneness. Remove and keep warm.
4. Stir-fry broccoli and onion in remaining tbsp sesame oil for 4-5 min.
5. Return the cooked steak to the skillet.
6. Add the soy sauce mixture that was set aside earlier to the skillet. Stir and cook for two minutes or until thickened.
7. Quarter, and serve over 1 cup cooked whole wheat linguine or spaghetti pasta.
Recipe makes 4 servings; whole wheat linguine pasta is included in the nutritional calculation. Substituting brown rice for specified pasta adds approximately 100 calories per serving.
