Ingredients
TomatoesEggplantMozzarella CheeseRomano Cheese
Directions
Makes 8 200 calorie servings

Reduce tomatoes in onion and garlic infused canola oil for 45 to 60 minutes.

Broil eggplant slices until nicely browned.

Alternate sauce, eggplant and mozzarella in layers in a baking dish, top with romano cheese.

Bake at 350 for 20 to 25 minutes.

Serve hot or cold; keeps well in fridge and in freezer.
