Marion Berry Oat-Bran Muffin w/fat free Cream cheese

1 heaping cup of frozen (fresh berries will fall apart) Marion BerriesDry list -1 cup Oat Bran1 cup Flour1/2 cup sugar1 cup (heaping) frozen Marion Berries1 tbl baking powder1/2 tsp saltLiquids -3/4 cup nonfat milk1 tablespoon Raspberry extract1 egg1/4 cup canola or grape-seed oilFilling -1 brick softened, fat-free cream cheese1/2 cup sugar
Preheat oven to 400
Soften cream cheese and blend with sugar and set aside. Blend dry ingredients together, blend liquid ingredients together and add to the dry, batter will be lumpy. Carefully stir in frozen berries.
Place paper cups in muffin tin and put one small spoon of mixture into each muffin cup. Divide cream cheese mixture evenly into cups. Divide remaining muffin mixture evenly making sure you put even amounts of berries into each cup. Bake for 20 to 25 minutes (the toothpick test doesn't work because of the cream cheese) and allow to cool. Serve with a skinny grande latte (make mine a triple shot please) and enjoy.
