1 cup mixed veggies (broccoli, cauliflower and baby carrots)1 clove garlic1/4 onion2 deli slices hickory smoked Tofurkey1 slice Provolone cheese1 whole large egg3 Tbs. egg whites1 teaspoon olive oilPam spraysalt, pepper, dill or other seasoning
Chop all veggies and garlic into small bits.
Saute med. heat in med-large non stick pan with olive oil. Set aside. Spray pan with Pam. Scramble egg mixture in a small bowl and add to pan making an egg pancake. Add cheese, tofurkey and seasonings until cooked through, fold over one side of egg mixture and you are done!!
