Dobby's Pesto Chicken with Penne Pasta

Nonstick Vegetable Cooking Spray1 Tsp. Olive oil1 lb boneless, skinless chicken breast, cut into 1" pieces4 green onions1 can (14 oz) water-packed artichoke hearts, drained, sliced4 Tbsp Basil Pesto4 Tbsp. Low-Fat Sour Cream8 oz. Whole Wheat Penne Pasta, cooked1 Tbsp. Parmesan Cheese
In a skillet sprayed with nonstick vegetable cooking spray, over medium-high heat, add olive oil. When hot, add chicken pieces and cook 4-5 minutes, or until done. Transfer to a plate and set aside.
Add green onion to the skillet and cook 1-2 minutes.
Add artichoke hearts, pesto, and low-fat sour cream. Stir well and add back chicken pieces. Add cooked penne pasta and mix well. Sprinkle Parmesan on top.
