Fat Free Sugar Free Blueberry Muffins

2 cup unsweetened blueberries (fresh or frozen) 2 cups white flour1 1/2 cups wheat flour 5 tsp baking powder1 cup slpenda (for baking/granular)1/2 cup egg beaters1/2 cup unsweetened applesauce1 cup non fat milk1.5 tbs splenda (granular)
Preheat over to 400 degrees.
Lightly spray muffin tins with non-stick spray.
Wash and drain blueberries. Set aside. if using frozen blueberries, thaw before using.
In large bowl, sift flour. Add baking powder and the 1 cup splenda. Mix together
In another bowl, mix the egg beaters, applesauce and milk.
Combine the wet mixture into the flour mixture. Stir just enough to blend (do not need electric mixer, just a spoon).
Gently fold in the bluebereries.
Pour batter into the prepared muffin tin, filling each up about 2/3 full. use the last 1 1/2 tbs of splenda to sprinkle on top of each muffin.
Bake for 17 min, or until tops are light brown.
