Easy Cake Mix Coconut Cake

* Cake Mix Yellow Pudding Mix, serving 10 (1 Box) * Coconut, raw, .666 cup, shredded * Milk, 1%, 1 cup * Olive Oil, .333 cup * Ricotta Cheese, part skim milk, .333 cup * I Can't Believe It's Not Butter, Light Spread (Soft), 1 Tbsp * Egg, fresh, 3 extra large *Lemon rind * Nutmeg, ground, .125 tsp * Vanilla Extract, 2 tsp
Beat together first six ingredients. Then add eggs one at a time .
On low speed for 1 minute then medium high speed for 2 minutes.
Last add Nutmeg, Lemon rind and Vanilla Extract. ( but do not over beat).
Pour batter in a pan or Bundt pan .
Bake at 350°F for 55 minutes.
