Whole Grain Banana Pancakes

Ingredients
2 overripe bananas1 Egg or 1/4 cup egg beaters1/2 cup skim milk1/2 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspon pumpkin pie spice (or nutmeg)1/2 teaspoon cinnamon1 teaspoon granulated sugar3/4 cup whole grain flour
Directions
Mash banana in a medium sized bowl. Add egg and milk. Stir together until frothy.
Slowly mix in the remaining "dry" ingrediants (flour, baking soda, baking powder, spices and sugar). Mix until well blended.
Coat skillet with butter flavored non-stick cooking spray. Pour tablespoonfuls of batter in a heated skillet. Cook for about 1 minute on each side (depending on your stove/pan).
Enjoy with fresh fruit and/or light syrup!

Makes 10 pancakes - 2 pancakes per serving.
