Orange Chicken for Fat Kids

Ingredients
6 Boneless skinless chicken thighs1 T olive oil1 onion sliced into thin half moons1T orange peel, more is ok1t ground ginger1 jigger of vodka2T Honey1 chili pepper1.5c orange juice, fresh is best
Directions
Coat the bottom of a wide heavy pan with the olive oil, place over med-hi heat. Brown chicken thighs in pan, turning once, remove, they do not need to be cooked through, only golden brown.
Add the onion to the pan and reduce heat to med-low, allow onion to wilt until translucent and soft.
Add the orange peel and ginger to the pan, allow to heat throughly, remove pan from heat and add vodka.
Return the pan to the heat and deglaze. Then add the remaining ingredients and the chicken.
When the sauce is thick and the chicken is cooked through it's done.

makes enough for three hungry people.
goes well with brown rice, carrots and broccoli.

    I'm not worried about the vodka because the alcohol cooks out. I'm sure there's a substitute for those morally opposed to alcohol. I made this tonight and it rocks, my picky family ate it all up. It's a lower calorie substitute for fast food fried chines chicken dishes. It will replace our take out! - 11/11/08

    Alcohol cooks out of food-it's supposed to enhance flavor. I love cooking with alcohol-and just because I may have kids one day, does not mean I will stop cooking with it. - 1/28/11

    This recipe is great! I used 2 chicken breasts instead of thighs and crushed red pepper instead of chili pepper. I think I will make more of the glaze sauce next time, it was tasty! Don't worry about the vodka, it's like making an orange/ginger extract and it cooks off. Way better than Panda! :D - 8/11/09

    Why vodka? I don't get that part. Not sure I want to feed it to my kids or me with vodka in it? I'm sure you probably can't taste it but me knowing its in there? - 2/3/08
